This is a simple and easy to make delicious recipe with only 2 ingredients, but it can be tricky with the consistency of the sugar syrup which can spoil the texture.

1 cup of cashew nuts
½ cup of natural flour
¼ cup of water
1 teaspoon ghee
¼ teaspoon of cardamom powder

Procedure
Grind the cashews in a bowl to make a fine powder. Make sure you only pulse for a few seconds at a time, so the cashews don't release their oil. Sieve the powder to make sure there are no lumps.
Add water and natural sweetener to a pan and bring to a boil. Let it cook for a few minutes (about five to six) until you get a syrup like rope. It should not be cooked for a long time, otherwise the katli will not be soft. Add cashews powder and mix well on low heat. Add cardamom powder to ghee. Keep stirring for five minutes, until the mixture turns into a good paste.
Turn off the heat and keep stirring, and soon the mixture will thicken and become a paste. Transfer the dough to a greased baking sheet and knead it a few times until it becomes a soft dough.
Roll out the dough a lot and cut a diamond shape. Now gently add the silvervark and your Kaju Katli is ready!
It will last about a week to 10 days.
